It does not matter what is in your history books, what matters is how the author (Charlaine Harris) decided to portray it. She is not, and has never been, a vampire.

A lot of authors make different ways for people to be changed into vampires. In this particular series, you have to exchange a certain amount of blood with a vampire to be turned. Sookie hasn’t had enough vampire blood to change yet. In here, a bite does not cause a change on it’s own. If you read through the books (and I assume it will happen in the series) there are lots of people that get bit during sex with vampires-they like it- and they don’t change.
